these looked and sounded great another candy to make my list.. the recipe and photo are from Favorite Christmas Recipes Ingredients:
9 ounces bittersweet chocolate |
2 tablespoons heavy cream |
2 tablespoons cognac or rum |
1 1/4 cups apricots, finely chopped |
1/2 cup hazelnuts, finely chopped |
2 tablespoons crystallized ginger, minced |
2 tablespoons confectioners sugar, sifted |
30 hazelnut halves |
Directions:
1. Step 1: 2. Line a large baking sheet with baking parchment or aluminum foil. 3. Step 2: 4. In the top of a double boiler over low heat, stir 4 ounces of the chocolate until melted. 5. Step 3: 6. Remove from the heat and beat in the cream and cognac. Blend in the apricots, chopped hazelnuts, ginger, and confectioners sugar. Stir well to combine. 7. Step 4: 8. Chill the mixture, if necessary, until firm enough to handle. Form into 1-inch balls and set aside on a sheet of wax paper. 9. Step 5: 10. In the top of a double boiler over low heat, stir the remaining 5 ounces of chocolate until melted. Remove from the heat. 11. Step 6: 12. Using a fork, dip each truffle into the melted chocolate, allowing any excess to run off. Place the truffles on the prepared baking sheet. Top each with a hazelnut half and chill. 13. Step 7: 14. When the chocolate has set, the truffles can be stored in an airtight container in the refrigerator for up to 1 month. |
