This is from Melissa d'Arabian's show, $10 Dinners. It's so rich & custardy - so different, but so easy! My whole family loved this, especially paired with coffee ice cream. Prep time does not include refrigeration & resting times. Ingredients:
1/4 cup heavy cream or whipping cream |
1/2 cup milk (lowfat is fine) |
2 tablespoons sugar |
1/4 cup butter, divided |
1 teaspoon vanilla extract |
pinch kosher salt |
1/2 cup semisweet chocolate chips or chopped chocolate |
2 eggs |
6 slices white bread, crusts removed and cut into triangles |
1/4 cup cream, for whipping (optional) |
ice cream (optional) |
Directions:
1. In a small saucepan, heat 1/4 cup cream, milk, sugar, 3 tablespoons butter, vanilla, and salt, and bring to a simmer (don't let it boil!). 2. Put the chocolate into a medium bowl or large measuring jug and pour in the cream mixture. 3. Let sit until the chocolate is melted, about 5 minutes. 4. Add the eggs and mix until well combined. 5. Grease a 9x13 baking dish generously with the remaining tablespoon of butter, and line it with the bread slices, overlapping slightly. 6. Pour the chocolate mixture over the bread, making sure to cover the tips. If necessary, push the bread down with your fingers to coat the bread completely. 7. Refrigerate, covered, for at least 2 hours. 8. Remove from the refrigerator 30 minutes before baking. 9. Preheat the oven to 375°. 10. Bake until the custard sets and the bread turns golden at the edges, about 30 minutes (check after 20 minutes! It's easy to overcook this.) 11. If serving with whipped cream, chill both the bowl and the whisk in the freezer first, to cut whipping time in half. |
