In a take on rice crispy treats, espresso, chocolate and cinnamon flavor these sweet cereal bars - I use multi-grain Cheerio's. Ingredients:
for the bars |
1/4 cup butter |
2 oz. semi-sweet chocolate, chopped |
3 cups miniature marshmallows |
1/2 tsp instant espresso powder |
1/4 tsp cinnamon |
4 cups toasted oat cereal (ie: cheerios - plain or multi-grain) |
for the glaze |
2 oz. semi-sweet chocolate chocolate, chopped |
1 tbsp. shortening |
1/2 tsp. cinnamon |
Directions:
1. Bars: 2. In saucepan, melt butter and chocolate; whisk in espresso powder and cinnamon. (This can also be done in a microwave) 3. Add marshmallows and stir until melted (if microwaving, you may need to microwave in ten second increments to melt). Remove from heat 4. Pour over cereal and stir until thoroughly coated. Press into a buttered 9 x 9 baking dish, pressing down firmly. (Rubber spatula works great, or just cover with a sheet of waxed paper and use your hands) 5. Glaze: 6. 2 oz. semi-sweet chocolate, chopped 7. 1 tbsp. shortening 8. 1/2 tsp cinnamon 9. Melt chocolate and shortening, stirring until smooth. Stir in cinnamon. 10. Drizzle over cereal bars. Regfrigerate until set. Cut into squares. |
