This is a delicious tea loaf, that cuts better the second day. Serve with a spread. Ingredients:
1 cup dates, pitted and chopped |
3/4 cup boiling water |
1 teaspoon baking soda |
1 egg |
1/2 cup white sugar |
3/4 teaspoon salt |
1 teaspoon vanilla extract |
3/4 cup semisweet chocolate chips, melted |
1/4 cup butter, melted |
1 3/4 cups all-purpose flour |
1 teaspoon baking powder |
1/2 cup chopped walnuts |
Directions:
1. Combine chopped dates, boiling water, and soda. Stir, and allow to cool. 2. Whisk together flour, baking powder, and nuts. 3. In a large mixing bowl, beat together egg, salt, sugar, and vanilla. Blend together melted chocolate and melted butter or margarine; stir into batter. Stir in date mixture. Add flour mixture, and stir to mix. Scrape into a greased 9 x 5 inch loaf pan. 4. Bake at 350 degrees F (175 degrees C) for 1 hour, or until it tests done. Cool in pan 10 minutes. Remove from pan. |
