From (not goddess healthy) She got this recipe from The Daily For all the raw foodies out there! Serve with Coconut Icing. - These are very small as is as I used whole walnuts and processed them down. If you used 1 cup of already processed walnuts you'd get much more. I didn't have cupcake holders so I lined shot glasses with plastic wrap to make these. I was able to get enough to fill 4 - 1 oz. shot glasses. Ingredients:
1 cup walnuts, unsoaked |
5 medjool dates, unsoaked, pitted |
1/8 cup cacao, powder unsweetened |
1 teaspoon coconut oil, liquid form |
1 teaspoon vanilla extract |
1/2 teaspoon almond extract |
1/4 teaspoon sea salt |
Directions:
1. Cupcake:Process walnut and dates in a food processor until mixture sticks together. 2. Add sea salt, vanilla extract and almond extract. 3. Roll small eight balls out of the mixture and place each one in 1 1/4-inch baking cups. 4. Mold the sides of the baking cups around the balls and form into a cupcake shape. |
