I wanted a crisp chocolate cookie without the chips and nuts; so after scouring the internet and not finding any, I made up my own. I also added almond extract because i wanted the nut flavor; but I believe that vanilla extract would be great as well as an orange extract. So if anyone tries this I hope you like it; my son and I certainly did Ingredients:
1 cup unsalted butter, room temp |
1 -1 1/2 cup caster sugar |
3 tablespoons unsweetened dutch cocoa |
2 tablespoons almond extract (can sub vanilla or orange extract) |
1/4 teaspoon baking powder |
1 large egg |
1/4 teaspoon salt |
1 1/2 cups flour |
nuts (they should be finely ground and roasted beforehand, the oils in them would weigh the cookie down) (optional) |
Directions:
1. cream the butter and sugar until light and fluffy; I added each ingredient into this mixture and blended well; i added the flour by the 1/2 cup because i wanted to make sure it was well blended. the mix should be light and fluffy when done. I chilled for about an hour; then preheated my oven to 350 degrees. 2. drop by teaspoon onto baking sheet or parchment paper, bake for 17 minutes. cool for 5 minutes. |
