I think this is the best tasting chocolate cream pie I have come across. It sets up real nicely too! Prep times and cook times are guesstimates. I didnt time myself : ) Ingredients:
1 9 inch prebaked pie shell |
3/4 cup sugar |
1/4 tsp salt |
6 egg yolks |
1/4 cup cornstarch |
3 cups whole milk |
8 oz bittersweet chocolate (i used 6 oz. semi and 2 oz. bittersweet) |
1 tsp vanilla |
Directions:
1. In a 3 qt. pan heat milk just until it starts to boil. Mix sugar, salt, and cornstarch in a small bowl. Add egg yolks to sugar mixture and mix. (It will be thick) Mix in a small amount of the hot milk to the yolk mixture. (called tempering ) Then add yolk mix to hot milk. Cook over medium heat until mixture thickens. Remove from heat and add chocolate and vanilla. Mix until chocolate is melted. Using a very fine strainer...strain mixture. Pour into pie shell. Cover with plastic wrap making sure to push wrap onto the chocolate filling (prevents a skin from forming). Chill pie in refigerator. When filling has totally chilled (about 3 hours) top with whipped cream and a dusting of cocoa powder. |
