This is classically good!! This popular dessert is so easy to make - spoon a creamy-chocolate pudding-like filling into a prepared cookies pie crust. Top with whipped cream and garnish with shaved chocolate - Enjoy!! Ingredients:
9 inches chocolate cookie pie crust |
2 1/2 cups carnation evaporated milk (regular, 2%, or fat free) |
3/4 cup granulated sugar |
1/4 cup cornstarch |
2 tablespoons cocoa powder |
2 eggs |
8 ounces semisweet chocolate, chopped |
1 tablespoon vanilla extract |
1 cup whipping cream |
3 tablespoons icing sugar |
1 teaspoon vanilla extract |
chocolate shavings |
Directions:
1. Heat 2 cups evaporated milk in a medium saucepan over medium heat. 2. Combine sugar, cornstarch and cocoa in a medium heatproof bowl. Whisk in remaining 1/2 cup evaporated milk. Beat in eggs. Slowly add hot milk to bowl. Stir to combine. 3. Return mixture to saucepan . Bring to a boil, reduce heat and cook, stirring for 2 minutes or until thick. 4. Meanwhile, place chocolate in a large heatproof bowl. Strain hot mixture over chocolate. Stir until chocolate melts and mixture is smooth. 5. Stir in vanilla. Place plastic wrap directly on surface of filling to prevent a skin from forming. Refrigerate until mixture is cold. 6. Spoon cold mixture into pie. 7. Whip cream until light. Add icing sugar and vanilla and beat until stiff peaks form. Spoon over chocolate filling. Sprinkle with shaved chocolate. 8. Refrigerate for at least one hour before serving. 9. TIP: Using a store-bought prepared crust makes this a no-bake recipe! |
