This is a nice way to make a regular cake a little more special! The richness of the cream cheese is a nice balance with the sweetness of the powdered sugar. The chocolate adds a nice twist to the regular cream cheese frosting recipe. This is from the Better Homes and Gardens cookbook and a family favorite.
Ingredients:
1 (8 ounce) package cream cheese, softened
1/2 cup butter or 1/2 cup margarine, softened
2 teaspoons vanilla
1/2 cup unsweetened cocoa powder
5 1/4-5 3/4 cups powdered sugar
Directions:
1. Beat cream cheese, butter, vanilla, and cocoa powder with an electric mixer until light and fluffy. Gradually add 2 cups of the powdered sugar, beating well. Gradually beat in additional powdered sugar to reach spreading consistency.
2. This generously frosts tops and sides of two 8- or 9-inch round cakes. (Have the recipe to frost a 13x9x2-inch cake.) Store left-over frosting in a sealed container in the refrigerator. Cover and store frosted cake in refrigerator.
