Chocolate Cranberry Oatmeal Cookies |

A healthy twist on chocolate cranberry cookies. Ingredients:
1/2 cup all-purpose flour |
1/2 cup cocoa powder |
1/2 teaspoon baking soda |
1/2 teaspoon baking powder |
1/2 teaspoon kosher salt |
1/2 cup unsalted butter, softened |
1/2 cup dark brown sugar, firmly packed |
1/2 cup yogurt, low fat |
1 teaspoon vanilla |
1 1/2 cups oats (not instant) |
3/4 cup dried cranberries |
1/4 cup flax seed |
Directions:
1. Preheat oven to 350 degrees Fahrenheit. 2. Combine the dry ingredients in a bowl and set aside. 3. With a mixer, whip the butter until fluffy. 4. Cream together whipped butter and sugar, then mix in yogurt and vanilla. 5. Mix in dry ingredients, making sure not to over-stir. 6. Stir in cranberries and oats. 7. Scoop onto a cookie tray and bake for 10-12 minutes in the middle rack. |
