Chocolate Covered Raisin and Oatmeal Cookies |

I love cookies and having 2 little ones in the house, they make a great sweet treat for them. I came up with these when I was out of raisins but had some chocolate covered ones. I just improvised and they came out soooooooo awesome. Sometimes I will add peanut butter to them too. They are chewy and just killer!!!! Of course, I have refined the recipe some and use chocolate chips now, but whatever. Ingredients:
1/2 cup shortening |
1/2 cup butter |
1 cup brown sugar |
1 cup white sugar |
2 eggs |
1 teaspoon vanilla |
3 cups quick-cooking oats |
1 1/2 cups flour |
1 teaspoon baking soda |
1 teaspoon salt |
1/2 cup raisins |
1/2 cup chocolate chips |
1 teaspoon cinnamon |
Directions:
1. Heat oven to 375. 2. Cream together sugars, butter and shortening. 3. Add vanilla and eggs, beat together until you have a grainy paste. 4. Combine dry ingredients and gradually add to sugar mixture. 5. Stir in raisins and chocolate chips. 6. Drop by teaspoonfuls 2 inches apart on ungreased cookie pan. 7. Bake for about 10-12 minutes or until golden brown. |
