Chocolate Cookie Cheesecake |

Prep time does not allow for time to chill overnight. Ingredients:
1 1/2 cups crumbled cream-filled chocolate sandwich cookies (about 16 cookies) |
3 tablespoons butter, melted |
4 (8 ounce) packages cream cheese, softened |
1 cup sugar |
1 1/2 cups semi-sweet chocolate chips, melted and cooled |
3 teaspoons vanilla extract |
4 eggs, lightly beaten |
20 chocolate cream-filled chocolate sandwich cookies, coarsely chopped |
Directions:
1. In a small bowl, combine cookie crumbs and butter. Press into the bottom of a greased 9 inch springform pan. 2. Refrigerate while preparing filling. 3. In a large bowl, beat cream cheese and sugar until smooth. 4. Beat in chocolate and vanilla. 5. Add eggs, beat on low speed just until combined. 6. Fold in half of chopped cookies. 7. Pour over crust and sprinkle with remaining cookies. 8. Place pan on a baking sheet and bake at 325* for 50-60 minutes or until center is almost set and top appears dull. 9. Cool on a wire rack for 10 minutes. 10. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. 11. Refrigerate overnight. |
