Moist, tasty and easy. Chopped glace cherries can also be added to coconut filling. Ingredients:
3 ounces butter |
2 tablespoons sugar |
3/4 cup plain flour |
1/4 cup self-raising flour |
1 tablespoon cornflour |
1/2 teaspoon vanilla |
2 cups coconut |
1 egg |
1/4 cup sugar |
1/2 teaspoon vanilla |
2 tablespoons self-raising flour |
3/4 cup milk |
1 1/2 cups icing sugar |
2 tablespoons cocoa |
1 ounce butter |
1 tablespoon water |
Directions:
1. Base: Cream butter and sugar, add vanilla, then sifted dry ingredients,mix well. 2. Press mixture over base of 30cm x 20cm tray. 3. Bake in moderate oven 20 minutes. 4. Remove, spread evenly with coconut filling. 5. Return to oven, bake further 25 minutes. 6. Filling: Combine dry ingredients in bowl, add combined beaten egg, milk and vanilla, mix well. 7. Remove from oven, stand 5 minutes, top with icing, cut into bars when cold. 8. Icing: Sift icing sugar and cocoa into bowl, add softened butter and water, beat until smooth. |
