Chocolate Chunk Soda Bread |

Crusty on the outside, chewy on the inside, this not-too-sweet bread is fabulous when sliced, toasted and slathered with butter or strawberry cream cheese. It also makes wonderful French toast! Ingredients:
2 cups flour |
1/2 cup chopped bittersweet chocolate or 1/2 cup miniature chocolate chip |
1/4 cup unsweetened cocoa powder |
1/2 tablespoon baking powder |
2 teaspoons sugar |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
1/4 teaspoon cinnamon |
1 cup buttermilk |
Directions:
1. Preheat oven to 350°F and spray a baking sheet with nonstick cooking spray. 2. Stir together all ingredients except buttermilk in a medium bowl. Add buttermilk; blend with a fork until well mixed. 3. Place dough on floured board and knead for 2 minutes or until smooth, using additional flour as needed. Shape dough into a 6-inch round and place on prepared baking sheet; let rest for 10 minutes. 4. With a sharp knife, slash a cross on the top of the loaf. Bake for 35 to 40 minutes or until a knife inserted in the center comes out clean. |
