Chocolate Chip Zuchini Muffins |

I love muffins and am always trying a new recipe. These taste great with the zuchini and cinnamon... I do have another zuchini muffin recipes listed , but these do not have oats. Ingredients:
1-1/2 cups all-purpose flour ( i use 1 cup whole wheat and 1/2 cup white flour) |
3/4 cup sugar |
1 teaspoon baking soda |
1 teaspoon ground cinnamon |
1/2 teaspoon salt |
1 egg, lightly beaten |
1/2 cup vegetable oil |
1/4 cup milk |
1 tablespoon lemon juice |
1 teaspoon vanilla extract |
1 cup shredded zucchini |
1/4 cup miniature semisweet chocolate chips ( i added what i thought looked like enough ) lol... |
Directions:
1. Preheat oven to 350 degrees 2. In a bowl, combine flour, sugar, baking soda, cinnamon and salt. 3. Combine the egg, oil, milk, lemon juice and vanillain a small bowl and mix well. 4. Stir into dry ingredients just until moistened. 5. Fold in zucchini and chocolate chips. 6. Fill greased or paper-lined muffin cups two-thirds full. 7. Bake for 20-25 minutes or until muffins are done by toothpick method |
