Pumpkin Muffins not like the store type. Even better than Dunkin Donuts muffins. Great warm with cream cheese or margarine spread on it. Ingredients:

1 cup pumpkin |
1/2 cup vegetable oil |
1/4 unsweetened applesauce |
2 eggs, beaten |
1 tbs. molasses |
1 cup all-purpose flour |
3/4 cup whole wheat flour |
1 cup sugar substitute |
1 tsp. baking soda |
1 tsp. baking powder |
3/4 tsp. cinnamon |
1/2 tsp. ground cloves |
1/2 tsp. salt |
3/4 cup reduced-fat chocolate baking chips |
Directions:
1. 1)Preheat over to 375º. 2. 2)Mix together pumpkin, oil, applesauce, eggs and molasses in a large bowl. Combine all-purpose flour, whole wheat flour, sugar substitute, baking soda, baking powder, cinnamon, cloves and salt in a separate bowl. 3. 3)Gradually add dry ingredients to pumpkin mixture. Mix well. Stir in chocolate chips. 4. 4)Line muffin tin with paper liners or spray with non-stick spray. Fill 3/4 full. 5. 5)Bake at 375º for approximately 20 minutes. |
