Chocolate Chip Orange Zucchini Muffins |

These flavors work wonderfully together for moist, delicious, good-to-the-last-crumb muffins! They're also a good use for some of those garden zucchini. Ingredients:
1 1/2 cups all-purpose flour |
3/4 cup sugar |
1 teaspoon baking soda |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1/2 teaspoon salt |
1 egg, lightly beaten |
1/2 cup canola oil |
1/4 cup milk |
1 teaspoon vanilla extract |
2 tablespoons fresh orange juice |
zest of one orange |
1 cup shredded zucchini |
1/4 cup miniature semisweet chocolate chips |
1/4 cup chopped walnuts |
Directions:
1. Grease and flour 18 muffin cups, or line with paper liners. 2. In a large mixing bowl, combine flour, sugar, baking soda, cinnamon, nutmeg, and salt. Stir to combine. 3. Combine egg, oil, milk, orange juice, orange zest, and vanilla extract. Mix well. 4. Stir wet ingredients into dry ingredients and mix just until moistened. Do not over-mix. 5. Fold in zucchini, chocolate chips, and walnuts. 6. Fill greased or paper-lined muffin cups two-thirds full. 7. Bake at 350 degrees F for 18-20 minutes or until muffins test done with a toothpick. |
