Chocolate Chip Orange Muffins |

These muffins are very quick and easy to make. I have gradually reduced the oil in this recipe to 1 tbsp to have a lower fat muffin. You may want to start with more oil (2 tbsp) to find your preferred texture. Ingredients:
2 1/4 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1/2 cup semi-sweet chocolate chips (or milk chocolate if you prefer) |
3/4 cup sugar |
1 tablespoon orange peel |
1 cup orange juice |
1 cup plain 1% yogurt |
1 egg |
1 egg white |
1 tablespoon oil |
1 1/2 teaspoons vanilla extract |
Directions:
1. Combine Mix I in a big bowl. 2. Combine Mix 2 in a smaller bowl and pour into the big bowl. 3. Combine the two mixes until just combined - do not over mix. 4. Bake at 375 F for 20-25 min until golden on top. |
