Chocolate Chip Oatmeal Bars |

A somewhat healthier version of one of my favorite treats! Ingredients:
1/2 cup butter |
1/2 cup applesauce (unsweetened) |
1 egg |
2 egg whites |
1 cup brown sugar |
1 tablespoon molasses |
1 teaspoon vanilla |
3 cups rolled oats (not instant) |
1 cup flour |
1 teaspoon baking soda |
1 teaspoon salt |
2 cups chocolate chips |
1/2 cup coconut flakes (unsweetened) |
Directions:
1. Preheat oven to 350. Line a 13x9 pan with parchment paper. 2. Beat first seven ingredients until creamy (butter through vanilla). 3. In a separate bowl, mix the remaining ingredients except chocolate chips and coconut (oats through salt). 4. Add dry ingredients to wet ingredients and mix thoroughly. Stir in by hand the chocolate chips and coconut. 5. Add batter to pan and spread evenly. 6. Bake for 20 minutes or until light gold on top. |
