Chocolate Chip Mini-Muffins |

A muffin recipe from the Harvest House B&B. Ingredients:
1/2 cup sugar |
1/4 cup shortening |
1 egg |
1/4 cup milk |
1/2 teaspoon vanilla |
1 cup flour |
1/2 teaspoon baking soda |
1/2 teaspoon baking powder |
1/4 teaspoon salt |
2/3 cup miniature semisweet chocolate chips |
Directions:
1. In a large bowl, cream sugar and shortening until fluffy. Add egg, milk and vanilla; mix well. Combine dry ingredients. Gradually add to creamed mixture; mix well. Fold in chocolate chips. 2. Spoon about 1 tablespoon batter into each greased mini muffin cup. 3. Bake at 375ยบ for 10-13 minutes or until muffins test done by inserting a toothpick in center of muffin. 4. Cool in pan about 10 minutes before removing. |
