Chocolate Chip Macadamia Nut Muffins |

Two of my favorite things in one muffin! I usually spray my muffin liners lightly before filling and the papers come off the baked muffin easily. Ingredients:
1 1/2 cups flour |
1 teaspoon baking soda |
1/4 teaspoon salt |
1/3 cup butter, melted |
2/3 cup sour cream |
1/4 cup corn syrup |
1 egg |
1 1/2 cups chocolate chips |
3 1/2 ounces macadamia nuts, quartered |
12 whole macadamia nuts |
Directions:
1. Preheat oven to 375º. 2. Combine flour, baking soda and salt in a large bowl. 3. In a medium bowl mix the melted butter, sour cream, corn syrup and egg. 4. Make a well in the dry ingredients and add the wet ingredients. Stir in the chocolate chips and macadamia nuts. 5. Line muffin pans with paper muffin cups. Fill muffin cups with batter. Place a whole macadamia nut on top of each muffin. 6. Bake at 375º for 15 minutes. |
