Chocolate Chip Fruit Cake |

For all those who, like me, did not get enough homemade fruitcake during Christmas! Ingredients:
3 eggs |
1 cup sugar |
1 1/2 cups flour |
1 1/2 teaspoons baking powder |
1/4 teaspoon salt |
1 cup dates, chopped (i usually buy them chopped already) |
1 cup good quality chocolate chips |
2 cups nuts - pecans, macadamias, walnuts...... |
1 cup candied cherries, chopped |
Directions:
1. Preheat oven to 325 degrees; 2. Spray a large loaf pan with cooking spray; 3. Cream eggs and sugar; 4. Stir in flour, baking powder, and salt; 5. Fold in fruits, chips and nuts; 6. Bake for 1 1/2 hours. |
