Chocolate Chip Cranberry Coconutty Cookies |

Yummy healthier cookies. Could also try substituting some of the fats with applesauce but I didn't have any to try it out. Ingredients:
2 tablespoons butter |
1/2 cup coconut oil (softened) |
1/4 cup brown sugar (packed) |
1/2 agave syrup |
1 egg |
1 egg yolk |
1 teaspoon cinnamon |
2 teaspoons baking soda |
1/2 teaspoon salt |
1/3 cup coconut flour |
2/3 cup whole wheat flour |
1 1/2 cups rolled oats |
1/2 cup dried cranberries (soaked in hot water for 20 minutes and drained) |
1/2 cup chocolate chips |
Directions:
1. Cream butter, oil, and sugar until smooth. 2. Beat in agave, egg, and yolk. 3. Add in dry ingredients minus oats, cranberries, and chocolate chips. Mix well. 4. Fold in oats, cranberries, and chocolate chips. 5. Form 1 inch balls. 6. Spray cookie sheet or stone with pam. Slightly flatten cookies. 7. Bake at 350 for 8 to 10 minutes. |
