I like this recipe because its not all that bad for diabetics, Myself being one. My husband likes it and he is a sweet junkie and he doesn't know the difference in this and the one that has regular sugars in it. This is not a very sweet cookie but sweet enough for those who just wants something to settle the sweet tooth. Ingredients:
3 cups all-purpose flour |
1 1/2 teaspoons baking powder |
1/8 teaspoon salt |
1 cup butter or 1 cup margarine, softened |
1 cup stevia, cup for cup |
3/4 cup light brown sugar, firmly packed |
3 eggs (large) |
1 teaspoon vanilla extract |
1 (12 ounce) package semi-sweet chocolate chips (may use sugar-free chocolate chips or reduce the amount of chocolate chips) |
1 (11 1/2 ounce) package milk chocolate chips |
1 (12 ounce) package white chocolate chips |
1 cup walnuts, coarsely chopped |
Directions:
1. Preheat oven to 350 degree. Combine the flour, baking powder and salt in a large bowl; set aside. Combine the butter, Stevia and brown sugar in a large bowl. Beat with an electric mixer set on high speed until light and fluffy. Beat in eggs on at a time; stir in vanilla. 2. Gradually add the flour mixture, beat well after each addition. Fold in all the chocolate chips and walnuts. 3. Drop the dough by rounded tablespoonfuls about 2 inches apart onto ungreased baking sheets. Flatten the dough slightly with the back of a fork. Bake the cookies until golden, about 15 minutes. Cool on the baking sheets for 5 minutes. Transfer cookies to wire racks to cool completely. |
