This is a recipe from an old family friend,the only chocolate chip cookie recipe I ever use. I like to underbake these slightly for a soft cookie, but you can leave them in a little longer for a crispy golden cookie. The butter flavor crisco and the rum extract give these cookies a really nice flavor. Ingredients:
1 cup margarine |
1 cup shortening (i like butter flavor crisco) |
1 cup white sugar |
2 cups brown sugar |
4 eggs |
2 teaspoons rum extract |
4 1/2 cups flour |
2 teaspoons baking soda |
1 teaspoon salt |
24 ounces chocolate chips (about 3 cups) |
Directions:
1. Cream together the margarine, shortening, and both sugars. 2. Add eggs and rum extract, and mix well. 3. Mix dry ingredients together in a bowl, and add to the butter and sugar mixture a little at a time until well incorporated. 4. Mix in chocolate chips. 5. Drop by spoonfuls on a cookie sheet and bake in a 350 degree oven for 8-12 minutes depending on how soft or crispy you like them. 6. Makes approximately 8 or 9 dozen cookies. |
