Chocolate Chip Cookie Icecream Sandwiches |

Treat the family to a special treat. These wonderful icecream sandwiches will be welcome any time of the day Ingredients:
6 tblspn unsalted butter - softened |
6 tblspn sugar |
6 tblspn brown sugar |
1 large egg - beaten |
1/2 tsp vanilla |
1 cup self-rising flour |
1/4 cup unsweetened cocoa powder |
1/4 tsp salt |
2/3 cup chocolate chips - semi-sweet, milk or white |
icecream for filling - you choose the flavor |
Directions:
1. Pre-heat oven to 350 degrees 2. Grease several baking sheets 3. Cream the butter & sugars together until light & fluffy 4. Beat in the egg & vanilla 5. Sift the flour, cocoa & slat together & fold into the sugar/butter mixture 6. Fold in the chocolate chips 7. Put about 4 heaping Tblspn of the mixture, spaced well apart on each baking sheet. 8. Press them down & spread them out using the back of a wet spoon 9. Bake for 12 - 15 mins 10. Cool on baking sheets 2 mins & then move to wire racks to cool completely 11. When cold use immediately or store in an airtight container until ready to use for up to 5 days 12. to assemble the sandwiches, spread a layer of icecream about 1 inch thick on a cookie, then press a 2nd one on top 13. Repeat to make 6 sandwiches 14. Freeze until ready to serve |
