Chocolate Chip and Coconut Bread Pudding |

A different twist to a timeless classic. We really enjoy topping this with Kahlua Cream Sauce Ingredients:
7 cups cubed day old french bread (small cubes) |
1 1/2 cups light brown sugar |
1 cup shredded coconut |
4 large eggs |
3 1/2 cups milk |
1 tablespoon vanilla extract |
1 1/4 cups semi-sweet chocolate chips |
1 cup chopped pecans |
Directions:
1. Preheat oven to 300°F. 2. Place cubed bread in a well buttered 9x13 baking pan. 3. In large bowl combine all remaining ingredients until well mixed. 4. Pour liquid mixture over bread making sure all of bread is submerged. 5. Let sit for approximately 1 hour. 6. Place in oven and bake for approximately 1 1/2 hours. 7. Remove from oven and let cool. |
