Chocolate Caramel Muffins (Surprise) |

I found this in the woman's day cookbook, which is for cooking with kids. This is a great and easy recipe, when you want to cook with the kids or grandkids! These muffins are best served warm, I have used other sweets Rollo's are good and CarAmello chocolates are divine! Ingredients:
2 cups self raising flour |
1/2 cup caster sugar |
1/2 cup pecans, finely chopped |
100 g dark chocolate, grated |
2/3 cup milk |
125 g butter, melted |
1 egg, lightly beaten |
6 jersey caramels, cut in half |
Directions:
1. Preheat the oven to moderate, about 180c. 2. Lightly grease a 12 hole muffin pan. 3. Sift flour into a large bowl, and stir pecans and chocolate. 4. In a jug/bowl, whisk the milk butter and egg together. 5. Make a centre in the flour mixture add the milk mixture all at once, and mix lightly until combined ~ and please dont overmix! 6. Spoon enough mixture into each of the muffin holes ~ only to half fill and. 7. top each with a half caramel and cover evenly with the remaining muffin mixture. 8. Bake for 20 - 25 minutes or until a skewer comes out clean and dry when inserted into centre of muffin. 9. Transfer to wire rack and cool. |
