1/4 c sugar |
1 tbs cold brewed coffee |
2 tsp grated orange peel |
1/2 c mini semisweet chocolate chips |

1/3 c canola oil |
1/3 c orange jice |

1 tbs cider vinegar |
1 tbs vanilla extract |
1 cup all purpose flour |
1/2 c whole wheat flour |
1/3 c baking cocoa |
1/2 tsp salt |
Directions:
1. In a small bowl, combine the topping ingredients; set aside 2. In a large bowl, combine the first 8 batter ingredients; beat until well blended. Combine the flours, cocoa, baking powder, salt; gradually beat into sugar mixture until blended. 3. Transfer to a 13x9x2 inch baking dish coated with cooking spray. Top with heaping tablespoons of ricotta mixture; cut through the batter with a knife to swirl. 4. Bake at 350 for 25-30 min or until a toothpick inserted near the center comes out clean. Cool on wire rack, referigerate any left overs. |
