CHOCOLATE CAKE WITH ORANGE LIQUEUR This recipe came from an estate sale. I obtained it when I purchased the family collection from the Smith Estate in Granbury, Texas in 1987. Ingredients:
14 ounce semisweet chocolate chopped |
3/4 cup plus 2 tablespoons unsalted butter |
10 egg yolks |
1 cup granulated sugar |
1 tablespoon vanilla extract |
1 tablespoon orange liqueur |
1 teaspoon lemon juice |
10 egg whites |
1/2 cups granulated sugar |
2 cups powdered sugar |
2 cups heavy cream whipped |
Directions:
1. Melt chocolate and butter in double boiler then set aside to cool slightly. 2. Beat yolks and 1 cup sugar until smooth then stir in vanilla, liqueur and lemon juice. 3. Blend in chocolate mixture. 4. Beat egg whites in large mixer bowl until soft peaks form. 5. Gradually add 1/2 cup sugar beating until stiff peaks form. 6. Stir 1 cup egg whites into chocolate mixture then fold in remaining whites. 7. Pour batter into greased and floured spring form pan and bake at 250 for 2-1/2 hours. 8. Cool completely on rack before removing pan. 9. Sprinkle cake with powdered sugar then serve with whipped cream. |
