Chocolate Cake Dressed In Berries |

CHOCOLATE CAKE DRESSED IN BERRIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hamilton Estate in Terrell, Texas in 1982. Ingredients:
1/2 cup toasted almonds finely chopped |
3 tablespoons unsweetened cocoa powder |
1/3 cup butter |
1/2 cup granulated sugar |
2 tablespoons brown sugar |
2 eggs |
1/2 teaspoon vanilla |
1/4 cup fresh strawberries chopped |
1/4 cup strawberry preserves |
2 tablespoons heavy cream |
3 ounces semisweet chocolate chips |
Directions:
1. Combine almonds and cocoa powder in a small bowl. 2. Cream butter and sugar in a bowl until fluffy then beat in eggs and vanilla. 3. Fold in almond mixture then the fresh strawberries. 4. Spoon mixture into a greased spring form pan and bake at 350 for 45 minutes. 5. Cool completely then remove from pan and spread with preserves. 6. Bring cream to a boil in a small saucepan. 7. Remove from heat then add chocolate chips and stir until smooth. 8. Cool 5 minutes then pour over top of cake allowing it to drizzle down sides. |
