My kids love these muffins! I love that they are healthy for you but fun too. I have always made these in mini muffins tins so I am not sure how they would work in regular muffin tins. Ingredients:
1/3 cup skim milk |
1/4 cup sugar |
1 egg |
1/2 cup unsweetened applesauce |
3/4 cup pumpkin puree |
2 teaspoons vanilla |
1 cup flour |
2 teaspoons baking powder |
1 teaspoon baking soda |
1/3 cup baking cocoa |
2 1/4 cups bran flakes |
2 tablespoons mini chocolate chips |
4 (1 g) packets sugar substitute |
Directions:
1. Blend all ingredients together just until mixed. 2. Divide evenly between 24 mini muffin tins. 3. Bake at 350 for 20-25 minutes. |
