Chocolate Bourbon Truffles |

This is a quick and easy truffle recipe. You can add more bourbon and less vanilla if you wish. Ingredients:
1 can (14 ounces) sweetened condensed milk |
3 cups semisweet chocolate chips |
1 tablespoon vanilla extract |
2 tablespoons bourbon (if you don't like bourbon you can substitute it with frangelico, bailey's irish creme, kahlua coffee liqueur, cointreau, grand marnier, creme de menthe or any other liqueur.) |
1/2 to 3/4 cup pecans, finely chopped |
granulated sugar, unsweetened cocoa, or very finely chopped pecans |
Directions:
1. Combine chocolate chips and sweetened condensed milk in a saucepan over low heat. 2. Heat, stirring, until melted and smooth. 3. Remove from heat. 4. Stir in the vanilla, bourbon, and 1/2 to 3/4 cup pecans. 5. Transfer to a small bowl. 6. Cover and chill for 3 to 4 hours, or until mixture is firm. 7. Working with fingertips, shape into 1-inch balls. 8. Roll in finely chopped pecans, sugar, coconut or unsweetened cocoa. 9. Place on a tray or baking sheet, cover loosely, and chill for at least 1 hour. 10. If desired, put each truffle in a decorative fluted paper or foil cup and keep in tightly covered container in the refrigerator until giving or serving. 11. Keep these refrigerated, tightly covered. |
