Chocolate Blueberry Muffins

These are best served warm.
Ingredients:
1/2 cup butter
3 oz semisweet chocolate chopped
1 egg, beaten
1 cup sugar
1 cup buttermilk
2 1/2 cups flour
1 tsp baking soda
1 cup fresh blueberries
2 tsp vanilla
Directions:
1. Preheat oven to 375 degrees
2. Grease 12 deep muffin tins or use paper liners.
3. Mel tthe butter and chocolate in a medium pan over a medium heat, stirring frequently until smooth. Remove the pan from the heat and leave to cool slightly.
4. Stir the sugar, egg, buttermilk and vanilla into the melted chocolate mixture.
5. Gently fold in the flour ad baking soda just until blended. Mixture will be lumpy.
6. Gently fold in the blueberries.
7. Spoon the batter into the tins. Bake for 25-30 minutes.
8. Transfer to a wire rack (if left in the tin they will become soggy)
9. These can be drizzled with a little bit of extra chocolate.
