Chocolate Banana Oatmeal Chunky Monkey

These are delicious gluten-free cookies that my sister modified from a recipe she found on the Baking Pan. Make sure to use gluten-free oats (certified) such as Gifts of Nature ( )
Ingredients:
1 cup soy flour
1/2 cup brown rice flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon xanthan gum
3/4 cup margarine
1 cup brown sugar, packed
1 egg
1 cup banana, mashed
1 3/4 cups oats
9 ounces chocolate chips
1 cup walnuts, chopped
Directions:
1. Combine flour, baking soda, salt, cinnamon, xanthan gum.
2. In another bowl, beat butter and brown sugar with an electric mixer until fluffy, add egg and banana; mix well.
3. Add flour to moist mix.
4. Stir In oats, chocolate and walnuts.
5. Drop by tablespoon onto parchment lined cookie sheet.
