This is a recipe that my great aunt Ludie made for us the entire time we were growing up. I don't know how old this recipe is, but it is at least 50 years old and still a family favorite. Enjoy Ingredients:
7 eggs separated |
1 cup very ripe mashed bananas |
1 cup granulated sugar |
3/4 cup potato starch |
1 teaspoon cinnamon |
2 cups chocolate chips |
Directions:
1. Preheat oven to 350 then lightly grease a tube pan. 2. Beat egg yolks then add sugar slowly and beat constantly. 3. Add bananas, potato flour and cinnamon then mix well. 4. Beat egg whites until stiff and fold into banana mixture. 5. Pour into prepared pan and bake 45 minutes then cool briefly and remove from pan. 6. In small saucepan melt chocolate chips and smooth over cake as glaze. |
