From a local volunteer cookbook Ingredients:
1/2 cup softened margarine |
1 cup sugar |
2 eggs |
1 teaspoon vanilla |
3 ripe bananas, mashed |
1/4 cup milk |
1 1/2 cups flour |
1/4 cup cocoa |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1/2 cup chopped walnuts |
Directions:
1. Preheat oven to 350°F. 2. Grease loaf pan. 3. Combine margarine, sugar, eggs and vanilla in a bowl. 4. Beat on medium speed until moistened. 5. Mash bananas and add with milk. 6. Beat on low to blend. 7. Add next five ingredients. 8. Beat on low until flour mixture is moistened. 9. Use a spoon to fold in the walnuts. 10. Pour batter into loaf pan. 11. Bake on centre rack 50-60 minutes. 12. Remove from oven and let stand 15 minutes on a wire rack. 13. Remove from pan. 14. Cool completely. |
