Chocolate Avocado Banana Bread |

my own edited version Ingredients:
2 cups whole wheat or unbleached flour |
1/4 cup cocoa powder |
1 tsp baking powder |
1 tsp baking soda |
1 1/2 cups vegan sugar |
1/4 teaspoon cinnamon |
1 tsp salt |
3 non-eggs (i use flax or chia seeds) |
1 ripe avocado, mashed |
2 ripe bananas, mashed |
1 tsp lemon juice |
3 tsp vanilla |
1 cup chopped walnuts or other nuts (optional) |
1 cup vegan chocolate chips (optional) |
Directions:
1. Preheat oven to 350 degrees. 2. Beat together eggs , vanilla, lemon juice and sugar. Add avocado and banana and blend until smooth. 3. Add all other dry ingredients slowly. It will be very thick so add about 1/2 cup water if you need to thin it out. 4. Stir in the nuts or chocolate chips if you choose to include them. Pour the whole mixture into a lightly greased pan. Bake for 50-60 minutes at 350 degrees. Mine didn't rise very much, but it is a dessert bread and is more dense than airy. ***I've made muffins with this recipe, and they will turn out lighter than the bread*** 5. It's finished when a wooden toothpick comes out clean. Let it cool before slicing. |
