Chocolate Amaretto Cheesecake |

I love cheesecake, but I hate graham crackers. so I came up with this recipe and when I make it, everyone absolutely loves it. You can also use this recipe to make mini cheesecakes. Ingredients:
1 (16 ounce) package round chocolate wafers |
1/2 cup melted butter |
1/4 teaspoon cinnamon |
1/4 cup toasted almond, chopped fine (like breadcrumbs) |
3 eggs |
1 lb cream cheese |
1 cup sugar |
1 1/2 cups sour cream |
6 ounces semi sweet chocolate pieces |
1/2 teaspoon almond extract |
1/4 cup amaretto liqueur |
Directions:
1. Place in chocolate wafers in a food processor and process until the consistency of bread crumbs. 2. Add almonds, and slowly pour in butter and cinnamon. 3. Pulse to combine. 4. Place in a spring form pan lined with wax paper. 5. Press down and have a 1 inches lip up the side of pan. 6. In a food processor, mix together the cream cheese, sour cream, and sugar. 7. When combine add eggs one at a time. 8. Then add the liquids. 9. Blend until all ingredients are a smooth batter. 10. At this point you can either melt the chocolate chips and incorporate that into the batter; or place them in a ziplock bag and add 1 teaspoons of powdered sugar. Shake off excess sugar and add to batter and mix. 11. pour into the chilled crust. 12. place on a baking sheet and bake for 45 minutes in preheated 350 oven. 13. it will be shaky when it comes out of the oven, but will firm up with cooling. |
