Chocolate Almond Shortcake |

I had this one given to me when I was first married in 1955. It was a real favourite. Ingredients:
1 1/4 cups flour |
1 1/4 teaspoons baking powder |
1 egg |
4 ounces sugar |
1 teaspoon cocoa |
4 ounces butter |
4 ounces butter, melted |
8 ounces icing sugar |
4 ounces flour |
1 egg |
1 teaspoon almond essence |
Directions:
1. Cream butter and sugar, add egg, beat well. 2. Add sifted dry ingredients. 3. Press into swiss roll tin. 4. Bake 20 minutes about 400 0°F. 5. ALMOND TOPPING- Beat egg and butter, add essence, then dry ingredients. Mix well. 6. Spread on base. Allow to set. 7. Ice with chocolate icing. |
