Choco Kahlua Pecan Cookies |

Chocolate, liqueur and nuts ... what better ingredients for a delightful cookie? Really quick and easy, they'll disappear fast! Ingredients:
1 cup unsalted butter |
2 cups brown sugar |
2 eggs |
1/4 cup kahlua liqueur |
2 1/2 cups all-purpose flour |
1 tsp salt |
1 tsp baking soda |
1/4 cup unsweetened cocoa |
1 cup chopped pecans |
1 1/2 cups chocolate chips of your choice (try milk choc or dark choc; white choc chips look pretty) |
Directions:
1. Preheat oven to 375F. Line a cookie sheet with parchment paper or lightly grease. 2. With an electric mixer in a medium bowl, beat together butter and sugar on high speed until creamy. Add eggs, one at a time, beating until incorporated. Add Kahlua; beat until smooth. 3. In a separate bowl, combien flour, salt, bakign soda and cocoa. Add to butter mixture and mix (by hand) to incorporate. Stir in nuts and chocolate chips. 4. Drop about a tablespoonful of dough onto baking sheet, leaving about 2 between cookies to allow spreading. 5. Bake for 8 to 10 minutes or until the edgtes are lightly browned. Cool on wire rack. 6. Makes about 36 cookies. |
