Adapted from Cornbread Gospels, p. 119. Ingredients:
1 cup cornmeal |
1 cup flour |
1/2 tsp salt |
1 tbsp baking powder |
1/2 tsp baking soda |
1/2 tsp stevia extract powder |
1 1/4 cups buttermilk |
2 eggs |
1/3 cup canola oil |
1/2 cup miniature chocolate chips |
Directions:
1. Preheat oven to 400F. Grease 12 muffin cups. 2. Combine dry ingredients in a large bowl. 3. In another bowl, beat together buttermilk, eggs and oil. 4. Gently blend into the flour mixture. 5. Fold in chocolate chips. 6. Bake 15 minutes, unmould immediately onto wire rack to cool completely. |
