This is one of our very favorite winter dishes - it's actually my favorite part of winter. The recipe is loosely based on a copycat version of Wendy's chili I saw years ago, but they don't have the veggies or the turkey, mine's better :)! Read more ! Love this with cornbread or popovers. Ingredients:
1 ground turkey |
1 packet french onion soup |
1 t. chili powder |
2 t. cumin |
1/2 t. pepper (or mrs. dash) |
21 oz can kidney beans, drained (can be doubled - i use a variety of different beans all at once, just for fun) |
6 oz. tomato paste |
8 oz. tomato sauce |
very finely chopped carrots, onions, celery, zucchini and green pepper, approx one plate full |
Directions:
1. Brown meat in a large soup pot and add seasoning. 2. Sprinkle the soup (dry mix) over the meat, stir to coat. Add 1 1/2 cups water, bring to a boil then turn down the heat a little. 3. Microwave or steam vegetables until just softened a little. 4. Add tomato sauce and paste to the meat and spices, mix well. 5. Add beans and vegetables, simmer for a few minutes until the rest of the meal is ready for the table. |
