This is a cake that is made of chocolate and honey - it just has to be healthy! Ingredients:

2 eggs, room temp |
1/4 cup brown sugar |
125g butter, softened |
3/4 cup honey |
1 1/2 cups self-raising flour |
1/2 cup cocoa powder |
1/2 cup milk |
chocolate icing |
1/2 cup cocoa powder |
1 cup icing sugar |
1/4 cup honey |
1 tablespoon hot water |
Directions:
1. Preheat oven to 180°Celcius. Grease and line a lamington pan with baking paper. 2. Using an electric mixer, beat butter and sugar until creamy. Add eggs, 1 at a time, beating after each. Add honey. Beat well. 3. Sift flour and cocoa over butter mixture. Fold into butter mixture until combined. Stir in milk until combined. Spoon into pan. Smooth surface. Bake for 30 minutes. Stand in pan for 5 minutes. 4. Make chocolate icing: Sift sugar and cocoa into a bowl. Combine honey and water. Stir into dry ingredients until smooth. Cut cake into squares. Drizzle icing over cake. Hide it somewhere safe and eat at leisure. |
