I found this in a cookbook called Bill's Food by Bill Granger of Sydney Australia. It looks yummy! Ingredients:
250 g flour |
2 teaspoons baking powder |
125 g unsalted butter, softened |
250 g caster sugar |
4 bananas, ripe, mashed |
2 eggs, lightly beaten |
1 teaspoon vanilla extract |
175 g chocolate chips (dark or milk, good quality is a must!) |
Directions:
1. Preheat the oven to 180c/350F/Gas4. 2. Sift flour and baking powder into a bowl. 3. In a separate bowl combine the butter, sugar, eggs and vanilla. 4. Stir in the chocolate chips. 5. Gently combine the wet and dry ingredients - careful not to overmix (or the end result will be a tough and dry loaf). 6. Pour batter into a nonstick or lightly greased 19x11cm (7 1/2 x 4 1/2 inch) loaf pan. 7. Bake 1 hour and 15 minutes or until skewer inserted comes out clean. 8. Remove from oven. Leave to cool in tin for 5 minutes before turning out on a wire rack to cool. 9. Serve in thick slices with creamy butter! |
