A colorful dish to round out any menu. Perfect with chicken. Ingredients:
3 tablespoons butter |
3 tablespoons olive oil |
1 cup chopped onion |
2 cups long-grain rice |
1/4 teaspoon saffron thread, crushed |
5 cups chicken stock or 5 cups canned broth |
salt & freshly ground black pepper |
1/3 cup snipped fresh chives |
Directions:
1. Melt butter with oil in heavy large saucepan over medium-high heat. 2. Add onion and saute until golden brown, about 5 minutes. 3. Mix in rice and saffron. 4. Add stock and bring to a boil. 5. Reduce heat to low. 6. Cover and simmer until all liquid is absorbed, about 35 minutes. 7. Season with salt and pepper to taste. 8. Mix in chives and serve. |
