Chive And Lemon Potatoes

Lemon adds so much zing to almost any dish. The lemon chive butter is amazing. If you can tolerate the skins, please use them for nutrition and for a pleasing visual effect.
Ingredients:

2 lbs. red potatoes, quartered
2 tbsp butter
4 tsp minced fresh chives
1 tbsp lemon juice
1 tsp grated lemon peel
1 tsp salt
-white pepper to taste
Directions:
1. Scrub potatoes, dry and quarter.
2. Boil potatoes in water for 12 to 15 minutes or until tender. Drain and return to pan.
3. In a small saucepan; add butter, lemon juice, lemon zest, chives, salt and pepper. Heat over medium heat until butter melts.
4. Pour sauce over potatoes and gently stir.
