Lemon adds so much zing to almost any dish. The lemon chive butter is amazing. If you can tolerate the skins, please use them for nutrition and for a pleasing visual effect. Ingredients:

2 lbs. red potatoes, quartered |
2 tbsp butter |
4 tsp minced fresh chives |
1 tbsp lemon juice |
1 tsp grated lemon peel |
1 tsp salt |
-white pepper to taste |
Directions:
1. Scrub potatoes, dry and quarter. 2. Boil potatoes in water for 12 to 15 minutes or until tender. Drain and return to pan. 3. In a small saucepan; add butter, lemon juice, lemon zest, chives, salt and pepper. Heat over medium heat until butter melts. 4. Pour sauce over potatoes and gently stir. |
