Chippy Peanut Butter Cookies |

This is a fabulous cookie recipe I found in TOH several years ago. I had written the recipe on a card and thought I had lost it, but it magically reappeared after cleaning out a drawer! I am posting it here for safe-keeping. For best results, use a high quality chocolate chip (like Ghirardelli) and a good peanut butter. I hope you enjoy these cookies as much as I do! Ingredients:
1 cup butter, softened |
1 cup creamy peanut butter |
1 cup sugar |
1 cup brown sugar, firmly packed |
2 eggs |
1 teaspoon vanilla |
2 1/4 cups flour |
2 teaspoons baking soda |
1/4 teaspoon salt |
1 (12 ounce) package chocolate chips (or chunks) |
Directions:
1. preheat oven to 350. 2. cream butter, peanut butter and sugars. 3. add eggs, one at a time, beating well after each addition. 4. beat in vanilla. 5. combine flour, baking soda and salt; gradually add to creamed mixture. 6. stir in chips. 7. drop by rounded tablespoons onto cookie sheets. 8. bake at 350 for 12-15 mins. 9. cool for 2 mins before removing to wire racks. |
