Kinda like having a macaroon bar cookie! Ingredients:
1/2 cup butter or 1/2 cup margarine |
1 1/2 cups graham cracker crumbs |
1 2/3 cups peanut butter chips, divided |
1 1/2 cups sweetened flaked coconut |
1 (14 ounce) can sweetened condensed milk |
1 cup chocolate chips |
1 1/2 teaspoons shortening |
Directions:
1. Heat oven to 350 degrees. 2. Place butter in a 13 x 9 x 2 baking pan. Heat in oven until melted. Remove pan from oven. Sprinkle graham cracker crumbs evenly over butter; press down with fork. 3. Layer 1 c peanut butter chips over crumbs; sprinkle coconut over peanut butter chips. Lay remaning 2/3 c peanut butter chips over coconut. Drizzle sweetened condensed milk evenly over top. 4. Bake 20 minutes or until lightly browned. 5. In a small microwaveable bowl, place chocolate chips and shortening. Microwave on high for 1 minute; stir. If necessary, microwave an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred. Drizzle evenly over top of baked mixture. 6. Cool completely in pan on wire rack. Cut into bars. |
