These can go great as an appetizer or even a main course! Ingredients:
marinade for the steak |
* 1 tbsp olive oil |
* 2 tbsp minced garlic |
* 1 tsp chili powder |
* 1 tsp brown sugar |
* 1/2 tsp salt |
* 1/2 tsp chipotle chili powder |
* 1/4 tsp ground cumin |
* 1 1/2 lbs skirt steak |
for the salsa |
* 2 ripe avocados, diced |
* 2 ripe roma tomatoes, diced |
* 1/3 cup red onion, chopped |
* a pinch of cilantro leaves |
* 2-3 pickled jalapeno peppers, minced |
* 3 tbsp fresh lime juice |
* 1 tbsp minced garlic |
* half a red pepper |
* salt |

* 1 bag tortilla chips |
* 1 can pinto or black beans |
* mexican cheese |
Directions:
1. 1. In a small bowl, mix all the marinade ingredients. Marinade for 30 minutes and grill. 2. 2. In a medium bowl, mix all salsa ingredients together. sprinkle salt over it. 3. 3. Once the steak is done, chop into bite size pieces. 4. 4. Prepare and enjoy! |
